WHO THE HELL CAN REALLY STAY THIS SKINNY HER ENTIRE LIFE?

Well, the answer is the incomparably beautiful Jacqueline Kennedy Onassis.  And rumor has it that she did it by not eating very much. Quelle surprise!  So, here is one of her favorite diet foods, a baked potato with caviar on top.

Of course, she allegedly ate just one per day when she was on this diet.  The one I ate last night was served alongside a filet and lobster tail.  Which is why I’m not skinny.  But this potato was really good.

    Step 1

    Wash a good sized Russet potato and prick all over with a sharp knife. Bake at 375 to 425 until soft. The temperature of your oven will dictate how long it takes to bake the potato. At 375 degrees, depending on the size of your potato, it will take about an hour and fifteen minutes. Just check it after an hour and squeeze the potato with a towel to avoid burning your fingers! See if it is soft. If it is still hard and lumpy, bake it some more.

    Step 2

    When the potato is done, split it open. Immediately drop in a knob of butter, about two or three tablespoonsful. Mash and fluff with a fork.

    Step 3

    Drop in a dollop of sour cream and top with a tablespoon or two of caviar. Eat immediately!
